GHC was first hired to conduct a feasibility study to determine whether HH could provide better food and service to their residents than an outsourced provider was offering by bringing their foodservice in-house. We determined that they could, and for the same or less money. GHC was then contracted to develop an entirely new foodservice operation and transition to it, seamlessly, from what was then their existing, outsourced service. The food would all be made-from-scratch, comfort foods, and the service would rival that of a good restaurant. There would be no hint of Institutional Foodservice about what we envisioned and produced.
November 2013 – October 2015
Legacy Restaurant Group is the parent company for The Original Ninfa’s on Navigation full-service restaurant and catering, two Antone’s Famous Po’boys quick service restaurants and catering, and the wholesale food operation for Antone’s that provides fresh sandwiches daily to over 200 grocery stores in the Houston area and outlining towns. The combined payroll for all seven entities averages 250 fulltime employees and 50-75 part-time employees.
This was a very fun and exciting project for Genuine Hospitality Consulting. Saint Arnold Brewing Company’s co-founder, Brock Wagner decided he wanted a restaurant and catering hall at his state-of-the-art brewery, both as a place to have lunch and as a unique location for private events. GHC’s involvement began with the feasibility and concept stages and continued all the way through design, building, staffing, training and opening. The restaruant is currently open for lunch, Monday through Friday, and offers beer-friendly foods from Alsace, Belgium, Texas and beyond. Ryan Savoie, formally of The Grove, was hired as Executive Chef.
Spring of 2011
Opened in the spring of 2011, Bayou City Event Center can seat up to 1,600 guests and is one of Houston’s premier event sites.
Java Pura Cafe was open in 2011-2013. The coffee shop/restaurant, served breakfast and lunch. Local premier coffee roaster Java Pura was awarded the operation of the sole food and beverage facility within the BRC building. Genuine Hospitality Consulting was hired to design and implement the food service portion of the project, including kitchen design, menu creation and pricing, vendor selection, and the hiring and training of the staff.
Joe Abuso of Genuine Hospitality Consulting has written the wine list for La Casa del Caballo, a fine Mexican steak house featuring fire-seared beef and other traditional dishes from the heart of northern Mexico.
